Comfortable...

Unless you've been living in a cave, you've probably heard that regions in the Midwest are experiencing something called a "Polar Vortex." (I linked you to a Wikipedia article to explain what that is, but I'll give you the Cliff's Notes - it's freaking cold.  Chicago was colder than the South Pole during parts of the day.  They brought the Lincoln Park polar bear INSIDE because it was too cold.  TOO COLD FOR A POLAR BEAR.)  Needless to say, we've all been snowed in (literally, our garage is frozen shut) and have been doing what we can to stay warm and not bored out of our minds.  (I love me a snow day, but being cooped up in the house gets a little maddening after awhile.)

So, what else could possibly be better on a too-cold-for-a-damn-polar-bear kind of a day than a nice, cheesy, comforting, casserole?

Before I go on to share this old family recipe, I must provide the following disclaimer: I know that cream-of-whatever soup is not good for you.  You'll notice there are a lot of foods I post on this blog which ignore some of my own basic food rules (i.e., feeding my  family with mostly whole foods packed with great nutrients).  SOMETIMES YOU BREAK THE RULES.  There are a ton of substitution recipes out there for cream of celery (et al) out there, so if that's your thing - check it out.  Otherwise, continue on.  All the while knowing that this recipe is built for comfort, not health.  And that it should be served in moderation. On days that are too cold FOR AN ACTUAL POLAR BEAR.  Now, proceed...


This used to be one of the simple recipes my dad would put together for us as kids when my mom would work late.  She would cook it sometimes too, but I think my dad was pretty much the king of casseroles in our house when I was growing up.  When my husband and I got married, he requested that I gather some of the simple weeknight meals that my family was accustomed to eating so that we would have some easy things to cook for the two of us.  This recipe?  At the top of his list.  You're gonna love it.  Let's get started.

{NMOTB Hamburger Casserole}

Ingredients
- 1 lb. of ground beef (We usually use the leanest beef we can find.  Go with what makes you happy.)
- 1 box of rotini noodles (We always use whole wheat rotini.  Growing up we used a lot of different shapes of noodles and obviously didn't use whole wheat.  You can experiment here if you want.)
- 2 cans of cream of celery soup (Just get over it.  It's fine.)
- Milk (You're just going to fill up one of the soup cans with milk.  LOOK, RECYCLING.  YOU'RE WELCOME.)
- Cheddar cheese (I use most of a 2-cup bag.  Eyeball this.  You just want enough to cover the top of your casserole)

Directions
- Preheat your oven to 350 degrees and put a pot of water on to boil for the pasta.  I forgot both steps while photographing this tutorial.  That was a bummer choice.  Do me a favor and don't forget.


- Begin by browning your pound of beef in a large skillet.  Truth be told I've never tried this with ground turkey or chicken (obviously, it's HAMBURGER casserole), but if you wanted to be experimental, I'd love to hear your results...


- Drain your beef once it is browned.  Add to your skillet both cans of cream of celery and then fill one empty can with milk and add that in there too.


- Stir the mixture around until everything is combined and allow to cook over medium low heat until it bubbles and thickens. (At this step my mom would also sprinkle in a little thyme. We've tried it both ways and like it better without. But, by all means - experiment! It's a casserole. You can almost never screw it up!)

Don't worry, it'll look more appetizing in the casserole.
- In the meantime, I hope you were boiling your pasta and didn't forget like me.


- Once your soup mixture has thickened a bit, your casserole is ready to assemble.  Begin by draining your pasta and putting it in the bottom of a 9x13 casserole dish.  (You can probably put it in something slightly smaller, but you may want to adjust cook times.)  Pour your soup mixture evenly over the noodles.  You don't have to worry about mixing it up, it'll get in there, but make sure it's relatively even so the whole casserole is layered correctly.


- After you've layered the noodles and soup mixture, sprinkle the entire top with cheddar cheese.  Like I said, I usually use most (if not all) of a 2-cup bag of cheddar cheese to do this.  Hey, no one said this recipe was health food.


- Then, just like any good casserole, you stick it in your preheated oven for 20 minutes or until the cheese is melted/bubbly.

You know it looks delicious.
- We usually serve ours with some sort of salad or green vegetable.  Because it makes me feel better about eating something so rich.  IT BALANCES OUT, RIGHT?  Recipe serves at least 8.  Or, two people who like seconds and a busy 3 year old who eats two pieces of pasta - with leftovers.  ENJOY!

So this is Christmas...


I've always been an avid believer and user of the flu shot.  Growing up in a household with a father who was perpetually on immunosuppressant drugs, getting a respiratory virus like the flu posed a very real threat to his well being.  Believe what you will about the flu shot and its effectiveness (I really do think it's become a pretty heated debate, and in those I always like to take the neutral stance of "Do whatever you think is right"), but when your own health poses a risk to one of your loved ones, you'll do whatever it takes to stay well.  So, basically, since then I've always gotten my flu shot and in my line of work, I'm usually able to get them for free - including this year.  So, imagine my surprise when last week I fell ill with the flu.  According to the doctor the flu shot isn't necessarily 100% effective and this year it appears there is a strain that is pretty resistant to the shot.  (By the way, for me, finding this out was akin to Ross finding out that condoms weren't 100% effective.)


All that to say, I wrote up a meal plan on December 1 and didn't even have time to eat the first meal on the menu before I was stuck in bed for the next three days.  (In truth, it's been a week and I'm still not feeling 100%.)  What I'm sharing with you here is what we ENDED UP doing.  Good thing meal planning is all about flexibility because otherwise we would have either gone hungry and I'd have a fridge full of groceries we never used.

This month was also bit difficult to plan for because we still haven't completely set in stone some of our plans for this month.  I went ahead and put meals down for nights where we may not actually eat at home - just a leg up for January if we end up going out!

So, anyway - here it is...

{December 2013}

December 1, 2013 - Homemade Pizza; Salad (Thank God my husband is our pizza chef because I could barely hold my head up to eat this.  It was the last real meal I ate over the next few days.)

December 2, 2013 - I am pretty sure my husband and The Incredible Hulk ate leftover pizza or breakfast for dinner.  I literally didn't get out of bed to find out.

December 3, 2013 - I ate some soup on this day.  It came from a box mix.  It was delicious.

December 4, 2013 - Chicken Bruschetta Bake; Salad (I subbed whole wheat stuffing mix for the first time - I wouldn't recommend this because the whole thing was a bit dried out.  But, given that it was my first real meal in several days, it still didn't taste that bad.)

December 5, 2013 - Beef Dip Sandwiches (Crock Pot); Chips; Steamed Broccoli (My husband has proclaimed this one of his favorite meals.  It is ridiculously simple.  We always finish our sandwiches with provolone and stick them under the broiler to melt the cheese.  Perfection.)

December 6, 2013 - Homemade Chipotle Bowls (This was my 30th birthday dinner.  Normally we might have tried to go out to dinner or made something a little more glamorous, but NONE of us were feeling up to it.  It's a favorite at-home meal and we went out for ice cream afterwards.  Good enough for me.)

December 7, 2013 - We totally planned to eat dinner at home on this day, but TIH was invited to two different birthday parties (quite the social calendar for a three year old) and we were served meals at both parties.  By the time we got home, no one was even thinking about any more food.


December 8, 2013 - Chicken Pot Pie; Arugula & Spinach Salad with Honey Lemon Dressing (One of my favorite combinations is the richness of pot pie with a nice, crisp green salad.  The dressing was a bit on the sweet side so next time I would probably cut the honey from 3 tablespoons to 2 - it still went perfectly with the salad.)

December 9, 2013 - Orzo Salad with Spinach, Tomato, & Feta (will add Rotisserie Chicken)

December 10, 2013 - Lemon Parmesan Chicken Skillet*; Italian Chopped Salad

December 11, 2013 - Crock Pot Beef Stroganoff*; Egg Noodles; Steamed Broccoli

December 29, 2013 - Beef Vegetable Soup; Bread (We made my husband's mother's recipe for the first time a few months ago and it was a SLAM DUNK.  We talked about how delicious it was for days after.  I love trying new recipes, but it is so refreshing that these tried and true recipes are just as amazing.)



December 30, 2013 - Greek Marinated Chicken; Greek Cous Cous

December 31, 2013 - World's Best Chicken; Smashed Potatoes*; Roasted Brussel Sprouts  (This has been on the menu for about 4 months and we've never gotten to it.  And I'm putting it on New Years Eve which I'm not sure we have plans for yet...so it may get bumped to January.  Poor dinner.)

'Tis a gift to be simple...

A couple of times a month, I will be sharing new recipes I have tried as part of our meal plan.  Yet again, we have had another month full of successful new recipes (several we will be repeating on future meal plans).  I'll be posting our December meal plan soon, so check back to find out what other new yummy things we'll be trying next month as well as what old favorites we are bringing back for a second round.  Remember, I also repin the pins for all of the recipes I try through Pinterest on my board "I Made This" so make sure you are following!


Chicken Tortilla Bake - I pinned this recipe a while back because it reminded me of a dish I had at a potluck once.  I didn't know who brought it so I couldn't ask for the recipe. After trying this recipe, I'm pretty sure this was the one, but I have to say I think my tastes may have changed a bit.  Or maybe the person who brought the dish to the potluck had a secret ingredient or two they added.  Because, I didn't really like this that much.  It was a simple enough recipe to make, but it was just kind of blah to eat.  The only thing I think I may try before I abandon this all together is to use tortilla chips instead of cut up corn tortillas. This may affect bake time, but I guess it is worth a shot.  Looks like I need to go hunt down that random stranger about their tortilla bake and what made it so good.


Buffalo Pork Chops - I pinned this recipe assuming it was going to just be a "man-pleasing" meal and that my husband would love it and I would just tolerate it.  Instead?  I LOVED IT.  (He loved it too, of course.  It is meat smothered in buffalo sauce...what's not to love?)  We used Frank's Red Hot Wing Sauce (our favorite) and served it alongside some Alfredo pasta and steamed asparagus.  It was perfect and better yet?  It was SUPER easy.  We will definitely be making this one again.

Crock Pot Lemon Chicken - I had initially planned on making a different recipe, but when I went back to look at my pin on my "I Made This" board, I realized we actually didn't like it the first time we had it.  Whoops.  So, instead, I went looking for a different recipe and stumbled upon this one.  I have to admit, it wasn't our favorite.  The flavor of the broth is great (as indicated in the recipe), but the potatoes come out bland (I would definitely recommend doing a bit of a seasoning rub on them as well as the chicken).  I also cooked this on high for 3 hours (though you can also do a slow and low cook with this recipe instead) and I fear it may have dried out the chicken a bit.  (I was also using a brand of chicken breasts I don't really like all that much, serves me right for trying to change things up...)  Overall, I think I was just disappointed by this recipe.  The smell of all of the seasonings and lemon and garlic when you're putting the dish together is intoxicating, but for us, the recipe just fell sort of flat.

Chipotle Grilled Steak with Lime Butter - We had to abandon a couple of our meals this month due to other engagements, and this was one of them.  Bummer because it looked great and though I'm rarely a steak eater, I was excited to give this one a try.  It is definitely going onto our December menu.  So check that out when I share it!



Cheese Bacon Beer Soup - The name alone should tell you why I pinned this recipe.  Cheese?  Good.  Bacon?  Good. Beer?  GOOD.  In fact, it looked almost too good to be true and so I was positive the recipe was going to fall flat of my expectations.  WRONG.  It was, quite simply, the perfect food.  Admittedly, with an entire stick of butter, bacon,   cheese, and half & half, this recipe falls very far from the healthy category.  And that also probably contributes to the fact that it tastes like HEAVEN.  Everyone in our family loved this.  I cut down on the cayenne pepper by a lot (recipe recommends 2 tsp., I did a little less than 1 tsp.) and served it with some freshly sliced chives on top.  Oh and bread.  Because you're gonna want to mop up all of the delicious cheesy goodness.  Such a great recipe and SO simple.  We will absolutely have this again.  Maybe not next month (given the decadence), but for sure we will be having it in the future.  WOW.

Need that picture of you...

A couple of times a month, I will be sharing new recipes I have tried as part of our meal plan.  Everything I'm reviewing today has the awesome theme of SIMPLICITY.  There's a pasta meal that will definitely become our "Last minute, I don't know what to cook and I don't have a whole lot of time to think about it" meal.  (Yes, even with meal planning, this still happens!)  This post also has the theme of  forgetfulness as I didn't take pictures of almost any of the meals.  Gah.  I'm sorry.  They all turned out looking relatively similar to what you see under the links...just trust me on that.  Remember, I also repin the pins for all of the recipes I try, my meal plans, and all of my recipe reviews through Pinterest on my board "I Made This" so make sure you are following!

Easy Lemon Chicken with Roasted Brussel Sprouts  -  I forgot to take a picture of this.  That's such a bummer because it was awesome!  The flavor was perfect and I was only halfway through my plate when I told my husband, "Don't have seconds, I'm eating this for lunch tomorrow."  My only beef with this recipe is that the pin called it "Easy Lemon Chicken."  I think we have different ideas of the word "easy."  It's not that it is difficult to make at all, but it does involve multiple steps and several dishes.  I think the pinner was probably trying to describe the simplistic (but oh so yummy) flavor profile.  I also tried a new recipe for the roasted brussels because the ones I have pinned keep getting flagged for being spam.  Whoops?  This one was great, but either I measured the salt wrong, or it calls for way too much because these were definitely a touch on the salty side.  I think you could get away with half of the salt.  We finished it with some freshly shredded parmesan which was delicious (but may have added to the overall saltiness.)  Definitely a repeatable dish.

Mexican Casserole - I also forgot to take a picture of the finished product for this recipe.  Dang it. I loved this so much I ate it for lunch the next day!  We served it with my famous guacamole.  Despite this being a Weight Watchers recipe (which I can sometimes be laden with substitutes that decrease calories, but increase other things that aren't good for you) - it's a relatively clean recipe.  (Relative to other Weight Watchers recipes, I should say.)  I think one change I will make next time is actually to add a little bit more of the chopped jalapenos.  I expected the dish to be a bit spicier and I think just a touch more of a kick would be great.


Pesto Cavatappi with Chicken - If you are looking for an easy, tasty, and cheap weeknight meal for your family, look no further.  The level of skill required this recipe is probably less than what I had as a college student.  Cavatappi is one of my favorite pasta shapes and pesto is one of my favorite sauces, so I knew I was going to love this, but I had no idea it was going to be so flipping easy!  Instead of using a rotisserie chicken (as recommended on the blog), we just made up a little bit more of the same marinade used for the roasted tomatoes and basted some chicken with it on the grill.  It was a snowy day here in Chicago when my husband was out there on the grill, so now I know he really loves me ;)  I also packed this for my lunch the following day and it was delicious heated up as well.

Taco Stuffed Shells - (UGH. I just suck visually as far as this post goes.  No picture of this one either.  Shoot.)  We had a few bumps as we were trying to make this.  First, in a (very helpful) effort to defrost the beef in the microwave (it hadn't totally thawed in the fridge), my husband accidentally cooked the beef a bit (I guess it as more thawed than he expected.)  So, by the time it was browned, it got a little dried out.  The texture of the filling was therefore a bit dry and off putting to me.  Fortunately, some magic occurred in the oven and once it baked for 30 minutes, it was on the road to delicious.  The second bump was that I forgot to pick up taco sauce and I'm not sure I even saw it as part of the recipe.  So instead, I just used salsa on top.  Which might have been better.  I don't know.  I love me some salsa.  The entire meal was a home run for our family. (Though I'm still on the fence about stuffed pastas in general...it might be my only weird food thing.  Eh. Whatever.)

A veritable smorgasbord...



October is here!  My favorite month of the year.  Such a favorite that I chose it for my own wedding (FIVE years on Friday! Where does the time go?)  This past weekend we were out of town for my husband's sister's wedding, so I had no time for grocery shopping or meal planning.  And when I went to my "On Deck" list it only had one item on it.  Whoops.  So, needless to say, I had to spend several hours both on the drive back and once we got home building a list for this month's meals.  I was feeling quite uninspired, to tell the truth.  Maybe because I feel like every October meal must consist of some combination of pumpkin/apple/cinnamon with a side of chili?

You'll notice a few repeats from last month which is simply because we definitely did some switching around with the meal plan for September.  That's okay.  Flexibility is an important part of meal planning and I feel as though we did do a nice job of shifting when it became necessary.  (There's also repeats because some of the recipes are just THAT good.)

Messing with the flavor...

Can anyone else believe it is September already?  I thought my summer break just started!



The great thing about September is that you can serve up some delicious meals in the crock pot which give you a nice taste of fall, but it is still warm enough outside that you're able to cook on the grill.  My husband is our grill chef, so I'm usually okay with sending him outside no matter what it is like outside, but you may not be so lucky! :)

I've been asked by countless friends to share my meal plans for every month.  Please keep in mind that although I do attempt to make our meal lists balanced and budgeted, that there will always be tweaks along the way both for my family and for yours to make it successful.  I'm sharing recipes (both old and new) that I'm using this month and I will make sure to do a round-up at the end of the month on how I felt some of the new recipes turned out.  I'll also do at least one tutorial a month on a recipe that we've developed ourselves (or one that we have tweaked from a Pinterest recipe to fit our needs.)

Keep in mind that some days I won't be cooking, so there I've usually just listed "No meal plan."  We end up eating leftovers, making sandwiches, grabbing a bite out to eat, or eating at someone else's house on those nights.  If we bring a dish to someone's house, I will share that recipe as well.  You can never have enough of those, can you?

Tuesday, September 3 - Homemade Pizza (We just make crust using the recipe on the back of the pizza yeast package, throw together a quick marinara, and top it with our favorites.  Don't be afraid to just go Boboli - love that stuff - or make one of those awesome looking Cauliflower Pizza Crusts.  It's all yummy in the world of pizza.

Friday, September 6 - Cilantro Lime Pasta Salad with Chicken* (The key to this being a "Friday meal" is that it's one simple dish.  You don't want a meal with a ton of components to make clean up in the kitchen easy so you can start the weekend out right!  We also love to utilize our grill as much as possible to relegate the mess to out of the house!) {Click here for recipe review.}

Saturday, September 7 - Bruschetta Chicken Bake, Bagged Salad (Not going to lie, there is a lot of processed food in this recipe, but it is a family favorite and is SO easy.  We only have this a few times a year to avoid the high sodium.  Then again, I did just wax poetic on the concept of Tator Tots.)

Sunday, September 8 - Braised Short Ribs, Mashed Potatoes, Roasted Broccoli (The short ribs recipe is actually my husband's and even I don't know how to make it entirely.  I asked him to share it with me and he literally said, "Wait, why?"  I said, "Oh, I want to post the recipe for my blog readers" and he said, "Ohhhh, no no no no.  No. Way."  So, I linked to one I found on Pinterest and hope that some day I will be lucky enough to know how to make the blessed recipe.  Good thing he still lets me eat it!  It really is the best thing ever.)
